Since getting the Vitamix blender as a present for the Holiday’s, my girlfriend and I have been exploring the new world of healthy blending. I have been blending smoothies and healthy recipes for a long time, but I must admit the Vitamix is a whole new level. Your are pretty much unlimited to what you want to blend which opens up the possibilities for mixing things and exploring foods in new ways. One of the neat features is the ability to blend and heat up soup. One of my new favorite healthy recipes is Roasted Red Pepper Soup from the Vitamix recipe book. Although my version has less half & half and more veggies, try it out

Roasted Red Pepper Soup
- 1 Tbsp Olive Oil
- 1/2 C Chopped Celery
- 1/2 C Chopped Onion
- 2 Garlic Cloves
- 2 Tbsp Flour
- 1 jar (10-15 oz) Roasted Red Peppers
- 1 C Low Sodium Veggie Broth
- 3/4 C Half & Half
- 1 tsp Cayenne Pepper
- 1 tsp Paprika
Chop up onions, celery, and garlic and place in pan with oil at medium heat. Heat until lightly brown or about 5 mins. Stir in flour and cook for another 1 min. While that is cooking, pour veggie broth, half & half, spices, and red peppers into Vitamix or other blender. Place veggie mixture into blender and mix at level 10 or high for 6-7 mins until steaming. Enjoy!
Note: If you do not have a Vitamix just mix until smooth and heat up if needed. If you want the soup more creamy at more half & half
