This recipe serves as a great lunch or snack that is low calorie, high fiber, and high protein. The skin of cucumbers are rich in fiber and hosts a variety of minerals including magnesium, silica, molybdenum, and potassium. This provides a nutrient dense meal that will sustain your energy all day. Try it out!
Smoked Salmon and Cucumber Wraps
What you need:
- 2 low carb or whole wheat or spinach tortillas
- 1/4 C light cream cheese
- 1/2 C Persian or English Cucumber, thinly sliced
- 2-4 oz Smoked Salmon, thinly sliced
- 2 handfuls of sprouts or baby arugula

Directions:
Spread each wrap with the cream cheese, leave about 1 inch uncovered on the sides. Spread cucumbers over cream cheese, and then spread the salmon over the cucumbers. Toss some sprouts on top and your ready to wrap it up and go. Wrap in plastic wrap or tin foil to take on the go.
