I will make this post short and sweet. I love making pots of stew because they tend to last long and are full of nutrition from foods from earth. You can flavor it any way you would like, just be creative! Here is what you will need for this Beef Stew with Butternut Squash….
- 1-2 lbs Beef Stew Meat
- 1 onion
- 1-2 lbs Butternut Squash cut into cubes
- 2 cloves garlic
- 1-2 stalks of leeks or fennel
- 3-4 Cups Beef Broth
- 1 can sun dried tomatoes
- Olive oil, rosemary, thyme, salt, pepper or wine
Cook meat on stove then add it to the rest of the meal. Or put it all in a crock pot or oven for a couple hours. Let me know what you think!
