Since today is Thanksgiving I thought I would put up a recipe that would be a nice side dish for today’s dinner or as another entree. It is called Balsamic Onions with Green Beans, here is what you will need…
Tofu with Balsamic Onions with Green Beans
- 1 lb Tofu
- 1 C Rice (preferably brown or wild rice)
- 2-3 Red Onions
- 1/2 lb French Green Beans
- 1 clove garlic
- Balsamic Vinegar
- Olive oil
- crumbled walnuts/pecans
Cut up the onions in half and cut into medium/large slices and place in pan with olive oil, and vinegar. I used frozen french green beans, but fresh would work fine. Place beans in pan with onions. Crush or cut up garlic and put in pan to let that cook for 10-15 min or until onions are deep red/brown color. Toss in crushed walnuts/pecans and let cook another 5 min. Season this dish as you want with salt,pepper, etc.
I placed the onions and green beans over rice and topped with cooked tofu to get a complete meal! You can just add onions and green beans as a side dish to your main entree, serves 2-3. Or use something else besides tofu. Try it out and let me know how it works, Happy Turkey day!
